This weekend we had Persian food up in San Antonio at a charming restaurant called “Pasha”. We’re all big fans of Baba Ganoush, but we had never heard of Kashk Bademjan, another eggplant dip. I like it even more than Baba Ganoush, though the Kashk (some kind of thickened whey product) might be a little hard to find in our little town.
Here’s a great video on how to make it. I suspect you might be able to substitute some soy yogurt if you needed a non-dairy option or couldn’t find Kashk.
